Red Velvet Cupcakes!!

Indulge in the rich and velvety goodness of Red Velvet Cupcakes with this delightful recipe! These cupcakes are not only visually stunning with their vibrant red color, but they also boast a moist and tender crumb, topped with creamy frosting for the perfect balance of flavors.

Ingredients
3/4 cup all purpose flour
2 tbsp yogurt
1/4 tsp baking soda
1/2 tsp baking powder
2 tbsp buttermilk OR 1/2 tbsp lemon juice
1/2 cup castor sugar
1/4cup butter/ vegetable oil
1 tsp vanilla extract
1 tbsp cocoa powder
1 tbsp beetroot powder OR red food colour
For cream cheese frosting:
2 tbsp unsalted butter
1/4 cup cream cheese softened
1 cup powdered sugar
1/2 tsp vanilla extract

Instructions
Preheat the oven to 180°C (350°F) and line a cupcake tray with cupcake liners. In a bowl, combine yogurt, buttermilk, and baking soda, and mix well. Set aside to allow the baking soda to react. In another bowl, sift together all the dry ingredients and set aside.
In a separate bowl, whisk together the butter and sugar until pale and creamy. Add the yogurt mixture and vanilla extract, and mix until well combined.
Gradually add the dry ingredients to the wet ingredients and fold gently until just combined. Be careful not to overmix.
Spoon the batter into the prepared cupcake liners, filling each about 3/4 full.
Bake for 10-15 minutes, or until a skewer inserted into the center of a cupcake comes out clean. Allow the cupcakes to cool completely on a wire rack.
While the cupcakes are cooling, prepare the frosting. In a bowl, cream together the butter and cream cheese with an electric whisk for 1-2 minutes, until fluffy. Gradually add the powdered sugar, mixing on low speed until incorporated, then increase the speed to medium-high until the frosting is creamy and fluffy.
Once the cupcakes are completely cooled, pipe the frosting onto each cupcake using a piping bag fitted with a star tip. Decorate with sprinkles or any desired toppings.
