Nothing beats delicious, homemade bread. The smell of freshly baked bread is out of the world. Baking pita bread in your oven and seeing these puff up is a treat to the eyes.

Pita bread is yeast-leavened round flatbread mainly from the Middle East, popular in Arabic and Syrian cuisine. It's soft, fluffy and so flavourful you can actually have it plain just like that. However it goes perfect with falafels, dips and spreads.

This recipe will give you the best and most authentic and delicious pita bread.

Ingredients:

3/4 cup all purpose flour/ bread flour

1/4 cup whole wheat flour

1/2 cup water

3/4 tsp dry active yeast

1/2 tsp sugar

1 tbsp olive oil

sesame seeds and fresh coriander for garnish

Instructions:
  1. Take a big bowl, put water in it. Add sugar and dissolve completely. Add in yeast and 1 tbsp of flour. Mix and let it sit for full 10-15 mins. Until it becomes frothy.

  2. After 15 mins add salt and oil and mix well. Now slowly add in the flour in batches and combine well to form a dough (Will be a little sticky at first).

  3. Now, either on a kitchen slab or on a chopping board (slightly rough surface for friction) dust some flour and knead the dough for 5mins (the dough should become non sticky). You can also knead this dough using an electric dough maker.

  4. Grease a bigger size bowl and put the dough in it. Cover with a wet cotton cloth, keep in a warm place to rise for 1 hour (microwave/oven or any kitchen cupboard)

  5. It will double in size, take it out and knead for 2 mins. Divide the dough into 9-10 equal portions and keep covered for another 15 mins.

  6. Roll out each dough ball into 4-5 inch diameter and 3 mm in thickness. Sprinkle with sesame seeds and coriander.

  7. Now dust some flour onto the baking tray and place these directly in the oven, bake at 210°C for 6-8 mins or until they are puffed up and done.
