Pico de Gallo!!

Pico de Gallo, also known as salsa fresca or salsa cruda, is a traditional Mexican condiment made from fresh ingredients such as tomatoes, onions, jalapeños, cilantro, and lime juice. This vibrant and refreshing salsa is incredibly versatile and adds a burst of flavor to many dishes. can be served as a topping or condiment for a variety of dishes, including tacos, burritos, quesadillas, grilled meats, seafood, or even as a dip with tortilla chips. Its fresh and zesty flavor adds a delightful contrast to richer dishes and is a perfect accompaniment to any Mexican-inspired meal.

Whether you're hosting a summer barbecue, a game day party, or simply craving a healthy snack, its a simple and delicious addition to any menu. Enjoy its bright flavors and versatility in your favorite dishes!


Ingredients

4 fully ripe medium tomatoes

1/3 cup red onion

2 green onion stalk

2 garlic cloves

1/4 cup fresh coriander

1 small jalapeno pepper (Or 3-4 green chillies, you can use according to your spice level)

1 tbsp fresh lime juice

1/2 tsp chilli flakes

1/2 tsp ground cumin

1/2 tsp sugar (optional)

salt and pepper to taste


Instructions
  1. Begin by roasting 2 tomatoes over an open flame, in the oven, or using an air fryer until they are charred on the outside. Be careful not to burn them. Once roasted, remove from the flame, peel off the charred skin, and set aside.

  2. In a food processor or chopper, combine all the ingredients listed along with the roasted tomatoes. Pulse the mixture a few times to chop the onions, garlic, tomatoes, and cilantro, but be sure to leave it chunky.

  3. Serve the Pico de Gallo fresh with tortilla chips, burritos, tacos, or any other dish of your choice. You can store any leftovers in an airtight container in the refrigerator for up to 5 days, or freeze it for up to a month.
