Kiwi and Cucumber Salad with French Vinaigrette!!

Many fresh fruits and vegetables, such as cucumber, watermelon, celery, tomatoes, and lettuce, have a high water content. Because in summers people are at higher risk for dehydration, this extra boost of water from your salads can help.

Try this easy salad recipe made with a healthy flavourful dressing which gives a good punch.

This is a perfect recipe if you have guests over and you wish to make a quick and beautiful looking salad, then this is it!! Kiwi cucumber refreshing salad!



Ingredients:

2 kiwi with skin

2 mini cucumber

1 cup loosely packed baby spinach (any other greens of your choice)

1/2 cup pomegranate seeds

4 tbsp feta cheese

1/2 medium red onion sliced

Handful of toasted pecans or walnuts


For the French salad dressing (French Vinaigrette):

1 tbsp balsamic vinegar (preferred) or any white vinegar

2 tbsp extra virgin olive oil

1/2 tsp Dijon mustard (you can add more as per your taste)

1 tsp honey/ maple syrup

pinch of salt

pinch of pepper


Instructions:

1. For the French vinaigrette dressing, combine all the ingredients together in a small jar, close the lid and shake until well combined. Keep aside.

2. Wash thoroughly and chop the kiwi and cucumber roughly, do not remove the skin.

3. Combine kiwi, cucumber, pomegranate seeds, onions and spinach in a salad bowl.

4. Pour the dressing on top and give it a light toss, to combine everything well. Crumble the feta cheese on top and serve immediately.
