Ingredients
2.75 cups all purpose flour/ bread flour
1 cup Water (lukewarm)
1/3 cup Sugar
3/4 tbsp yeast
3/4 tsp salt
1/8 cup vegetable oil
1/2 cup finely chopped spinach and coriander
For toppings
4-5 olives sliced
6-7 cherry tomatoes sliced
1/2 medium onion sliced
1 tsp Italian seasoning
2 tbsp Olive oil
Instructions
In a large bowl, add water and dissolve the sugar completely. Stir in the yeast and let it sit for 10-15 minutes until it becomes frothy.
After 15 minutes, add salt and oil, mixing well. Gradually add the all-purpose flour in batches, combining thoroughly to form a dough (it will be slightly sticky at first).
Dust some flour on a kitchen slab or a chopping board (a slightly rough surface works best for friction), and knead the dough for 5 minutes until it becomes non-sticky.
Grease a larger bowl and place the dough in it. Cover with a damp cotton cloth and let it rise in a warm place for 1 hour (a microwave, oven, or cupboard works well). Once doubled in size, punch the dough in the center to release the air. Add spinach and coriander, then knead to combine.
Transfer the dough to a greased flat baking tray and let it rise for another 30 minutes. Use your fingers to dimple the surface of the dough.
Arrange the toppings on the dough, sprinkle with Italian herbs, and drizzle with olive oil.
Place the tray directly in the oven and bake at 180°C for 15-20 minutes or until fully cooked.
