Figs and Praline Ice-Cream!!

Try this decadent fusion of flavors, where the luscious sweetness of ripe figs meets the crunchy allure of homemade praline. This creamy concoction offers a beautiful symphony of textures and tastes, with each spoonful delivering a delightful contrast of creamy richness and nutty caramel notes. Whether served in a bowl, atop a cone, or as a lavish topping for your favorite desserts, this ice cream is a luxurious treat fit for any occasion.






Ingredients:

400ml whipping cream/ heavy cream chilled

150 gms dried figs OR 250 gms fresh figs chopped

150ml water

2 tbsp sugar

For praline:

1/2 cup sugar

3 tbsp water

1/2 cup mixed almonds and walnut


Instructions:

1. Put chopped figs, 150ml water and 2 tbsp sugar in a pan and cook until the mixture thickens and the figs get mushy. Set aside.

2. In a separate pan make the praline by cooking the sugar and water, until it caramelises. Once the caramel is ready add in the almonds and walnuts, stir in for 30 seconds and immediately pour on a baking mat and let set.

3. Once it sets, either chop it into very fine pieces or grind in a food processor. Set aside.

4. In a big bowl, put the whipping/ heavy cream and whip until it thickens slightly. Add in the fig mixture and continue whipping until it becomes fluffy and thick creamy consistency.

5. Add in the grinded praline and fold in well.

6. Transfer to an ice cream mould, cover tightly with a cling foil (you can also use an airtight glass container) and freeze for 4-5 hrs or overnight until it sets.
