Cherry Sheet Cake!!

Ingredients:

1 cup all purpose flour

3/4 cup butter

3/4 cup sugar granulated

3 eggs/ 1 cup yogurt (for eggless)

1 tsp vanilla extract

1 tsp lemon zest

1 tsp baking powder

1 cup cherries fresh, pitted

1/2 cup frozen blueberries (optional)

powdered sugar for dusting

Method:

1. Preheat the oven to 180 °C and grease a 7 inch cake mould.

2. Beat sugar and butter using a whisk until light and fluffy. Add eggs (or yogurt), vanilla essence and beat until everything is well combined and fluffy.

3. Sieve together flour, baking powder, baking soda and add it to this mixture in batches.

4. Whisk lightly to combine everything well. Add half of the cherries and fold in.

5. Pour this mixture into the greased mould and top with the remaining cherries and blueberries.

6. Bake at 180 °C for 40 mins. After 40 mins, insert a skewer to check, it should come out clean. If not, bake for another few minutes. Take out from the oven and cool at room temperature. Dust with powdered sugar and enjoy!
