Chai Latte Popsicles!

Chai has been popular for thousands of years. While historically it was made by steeping tea leaves and mixing them with spices, most coffee shop customers today associate the word “chai” with a sweet, milky, and decadent drink with a hint of vanilla.
Chai latte popsicles offer a refreshing twist on the beloved traditional Indian beverage. Combining the rich, spiced flavors of chai tea with the creamy texture of a latte, these frozen treats are a delightful way to cool down on a hot day. You can also customize by adding ingredients like chopped nuts, chocolate chips, or even a swirl of caramel or chocolate sauce before freezing for extra indulgence.

Ingredients
3/4 cup water
1 cup heavy cream
1/4 cup milk
1/2 tsp vanilla extract
2 tbsp black tea of your choice
1 inch cinnamon stick
1/2 small star anise
2-3 whole cloves
2 green cardamom pods
3-4 black peppercorns
Small pinch of nutmeg
1 tbsp ginger crushed
4 tbsp maple syrup/ honey/ sugar (you can adjust sweetness according to your taste)
Instructions
In a pan, add cinnamon, star anise, cloves, cardamom, peppercorns, and nutmeg. Dry roast for 30 seconds to release their aroma, then add water. Add tea leaves, ginger, and sugar (if using). Bring to a boil, then reduce the heat and simmer until the liquid is reduced by half. Remove from heat, strain, and let cool completely.
While the chai concentrate cools, whip together milk, maple syrup/honey, vanilla extract, and whipping cream until creamy. Reserve 2-3 tablespoons of this mixture. Once the chai concentrate is cold, combine it with the whipped mixture. Pour into popsicle molds and freeze. After 1 hour, pour the reserved mixture over each popsicle and freeze until completely set. Enjoy!
