Banana bread with walnuts and cranberries!!

Banana bread cake is a delightful and comforting treat that combines the delicious flavor of ripe bananas with the soft texture of cake. This moist and flavorful bread is infused the nuttiness of walnuts and the tartness of cranberries. Served warm with a pat of butter or a drizzle of honey is an indulgence. It's perfect for breakfast, as a snack, or even as a dessert.



Ingredients

2 very ripe bananas (medium) mashed with fork

1 cup all purpose flour

1/3 cup butter (at room temperature) OR 1/4 cup vegetable oil

1/2 cup castor sugar/ granulated sugar

2 large eggs OR 1/3 cup plain yoghurt/ curd

1 tsp baking powder

1/2 tsp baking soda

1/3 tsp salt

1/2 tsp cinnamon ground

1/4 tsp nutmeg ground

1/2 tsp vanilla extract

1/2 cup chopped walnuts

4-6 tbsp raisins and cranberries


Instructions
  1. Preheat the oven to 180°C and grease a cake pan, lining it with baking paper. If using yogurt, add baking powder, mix, and let it sit for 4-5 minutes to react.

  2. In a mixing bowl, combine butter and sugar, whisking until the mixture becomes pale and fluffy. Add eggs or the yogurt mixture, mashed bananas, and whisk until a smooth batter forms.

  3. Sift all the dry ingredients together and add them to the batter along with vanilla extract. Mix well. Gently fold in walnuts, raisins, and cranberries until evenly distributed. Avoid overmixing.

  4. Transfer the batter to the prepared baking pan. Bake at 180°C for 40-45 minutes or until cooked through (a skewer inserted into the center comes out clean). Remove from the oven, let cool at room temperature, and then serve! Enjoy your delicious banana bread cake with walnuts, raisins, and cranberries.
