Avocado and Cranberry Barfi!!

We Indians love barfi as a sweet treat, so why not try this healthy version? It contains the goodness of avocado, paneer, khoya, almonds, and berries.

Avocado is rich in potassium and supports healthy blood pressure levels. It's loaded with heart-healthy monounsaturated fatty acids and fiber, helping to lower cholesterol and triglyceride levels. Paneer is super rich in protein and also contains fat, iron, calcium, and magnesium, making it an even healthier choice. Cranberries are packed with nutrients and antioxidants, known to lower the risk of urinary tract infection (UTI), improve immune function, and decrease blood pressure.


So why not celebrate festivals and special occasions with healthy food choices for ourselves and our loved ones? Give this recipe a try, I'm sure you're going to enjoy it!




Ingredients

1 cup Paneer (cottage cheese) grated/crumbled

1/2 cup khoya/ mawa grated

2 avocado mashed

3/4 tsp cardamom/ elaichi powder

1/2 tbsp stevia/ any other sugar free substitute

OR 1/3 cup monkfruit sweetener/ OR 1/3 cup

brown sugar

1/4 cup chopped dried cranberries OR any other berries/ cherries of your choice

1/4 cup chopped almonds


Instructions
  1. Line a plate or tray with butter paper or grease it with some ghee and set aside.

  2. Heat a thick-bottomed or non-stick pan over medium-low heat. Add the avocado and cook for 5-7 minutes, stirring continuously.

  3. Add cardamom powder, paneer, and khoya. Mix well. Cook and stir continuously over low-medium flame until the mixture loses moisture, thickens, and begins to leave the sides of the pan. Be sure to stir continuously to prevent sticking and burning at the bottom of the pan.

  4. Add sugar substitutes and cook for 2-3 minutes until dissolved and the mixture comes together.

  5. Add chopped almonds and berries (reserving some for topping). Mix well and pour into the butter paper-lined or greased pan. Top with the remaining almonds and berries. Let it cool and set completely. Using a knife, score it into squares and slice them.


Recipe notes

You can substitute avocado with any other fruit puree like mango, chikoo, etc

Be patient while cooking the puree, it takes a bit of time
